Pizzaria 1926: Classic Naples Pizza

Husband and wife duo Rosario and Maria Sartore run a classically Neapolitan pizzeria on Dalry Road. Named after Napoli Football Club, 1926 is a shrine to what the Sartore’s hold dearest to them; pizza and football.

 

Dalry Road might not be the most appealing street in Edinburgh, however, there are some brilliant restaurants and you need look no further if what you are after is your own slice of Naples. The pizzeria is dominated by all things Napoli Football Club; a picture of club legend Maradona hangs on the walls, from the ceiling Napoli strips hang on washing lines, and even the front of house wears Napoli tops. Yet this is eclipsed by the handmade brick oven painted light blue adorning the Napoli Crest. The small restaurant is tightly packed, on tables sit candles inside of old San Marzano tins, adding to the authentic Naples atmosphere.

Pizzas are named either after its classic name or if it is a pizza made by Pizzeria 1926 then it is given the first name of a current Napoli player followed by their shirt number. The price of the pizzas is on the high end with pizzas ranging between £9-14.

 

The dough is made using 00 flour that is fermented for 48 hours. Once it is cooked the pizzas puff up significantly. The inner of the crust is very airy, with a nice amount of leopard charring on the crust in true Naples fashion.

My Pizza

 

I chose the Kalidou (No 26), named after Napoli defender Kalidou Koulibaly. The pizza was topped with sugo, Fior Di Latte, chilli seeds, spicy n’dujia and thinly sliced pork sausage.

 

The Fior Di Latte is a type of mozzarella; it is tangier and has slightly more bite, and it helps to keep the sweet taste of the sugo sauce without being overpowered by the spice. The pork sausage gives the pizza a crisp texture that it would lack without. The heat from the n’dujia is fiery and elevated to the next level by the chilli heat. The dough was very aromatic and airy, but you definitely need to use a knife and fork for the pizza as the dough is far too soft on the inside.
